Our Parmigiano Reggiano Only from Italian Pezzata Rossa Cows is exclusively made at the Colline del Cigarello e Canossa mountain cheese factory owned by the Group.
A real delicacy, this cheese enjoys “Mountain Product” and organic certifications, being made in a sustainable and integrated short supply chain certified for animal welfare, perfectly in line with our commitment to the highest quality and traceability.
The milk we use only comes from the “Le Boccede” farm located in the mountains and part of the official Parmigiano Reggiano area. This farm focuses solely on rearing Italian Pezzata Rossa breed cows and is a key partner for us, sharing our core values in terms of sustainability and animal welfare. “Le Boccede” has solar panel and biogas systems for generating its own power, with due respect for the environmental and mountain ecosystem.
The “Le Boccede” farm has also obtained animal welfare certification issued by Certiquality according to the Classyfarm protocol, achieving a score of 86%, well above the national average (78%). This result is further confirmation of our focus on sustainability and our ability to meet market trends, thanks to the experience we have gained during more than 45 years in the dairy sector and to our constant communication with our customers. In fact, recent data from the Osservatorio Immagino GS1 Italy 2023 shows a positive trend both in the supply (+5.4%) and demand (+3.2%) for products that respect the principles of sustainability and animal welfare.

The “Only from Italian Pezzata Rossa Cows” label issued by A.N.A.P.R.I. (National Association of Italian Pezzata Rossa Cattle Breeders) is an additional guarantee of the authenticity and traceability of this special cheese.

The farm milk is processed at the Cigarello cheese factory, nestled on the mountainside of the Reggio Emilia Apennines, where the master cheesemaker and his team devote their processing experience and passion to producing Parmigiano Reggiano “Only from Italian Pezzata Rossa Cows”. After initial ageing of at least 12 months in the mountains, the expert quality control is followed by an additional quality selection process at 20 months, by tapping it with a hammer to check its maturity, along with organoleptic sensory analysis by experts from the Consortium, only after all this can we obtain “Mountain Product” certification.
We offer this product for our retail customers in different cuts and packs, while also supplying tailor-made solutions to best meet their needs: from slices (with fixed and variable weights) in vacuum packs or thermoformed tubs, so they can eat it on its own and savour its sweet, delicate flavour, to cubes or nuggets packaged in convenient tubs, perfect for serving with platters of cured meats during buffets or aperitifs.
